Nordic craft.
Rooted in place,
made by hand.
Two small producers from the forests and gardens of Småland, Sweden. One making balsamic vinegar from handpicked Nordic fruit. One turning forgotten apples into ice wine. Both working with care, in very limited quantities.
Odensjö Hemlagad
Nordic Balsamic
A true expression of Swedish nature, bottled.
Founded by Henrik and Shine in the small village of Odensjö, just outside Ljungby in the heart of Småland. From the beginning the ambition has been clear: balsamic vinegar of exceptional quality, rooted in the finest the Nordic landscape has to offer.
The produce — apples, pears, strawberries, blueberries, and notably raspberries — is handpicked from nearby forests and gardens, as well as in collaboration with selected local growers. Odensjö Hemlagad is among the few dedicated balsamic producers in Sweden.
The result is a vinegar defined by clarity, freshness, and layered complexity — without the heaviness of conventional balsamic. A condiment that brings the character of the Nordic landscape directly to the table.
SkyggeBrygger
Swedish Apple Ice Wine
Small batches. Distinct character. Nothing wasted.
SkyggeBrygger — "the brewer in the shadows" — is a quietly independent project from the same corner of Småland. The idea was simple: give value to apples that would otherwise go to waste.
Apples come from village gardens around Odensjö and old wild trees growing along roadsides and in nearby forests. All varieties are used — known and unknown, cultivated and wild. The must is frozen, thawed slowly, and the concentrated juice fermented into wine using Champagne yeast.
The result is a wine of low alcohol, vibrant acidity, and pure fruit expression — a direct reflection of the landscape it comes from, with minimal intervention and maximum character.
